Shamrock Shake

The celebrated Shamrock Shake makes its rounds once a year and I’ve decided to make a healthy version for you to enjoy, before you move on to pints of green beer (of course).  There are tons of different recipes online but I took what I had in my fridge (because I’m lazy) and decided to give it a go, and I have to say… it turned out much better than I thought!!  Without using any artificial flavor or food coloring, the shake has that pop of kelly green, a creamy texture and is full of delicious ingredients.  A fun and easy concoction to make and serve within minutes.  See below for this simple St. Patrick’s Day treat! xo

SHAMROCK SHAKE (ONE SERVING)

  • 1/4 Cup Coconut Ice Cream
  • 1/4 Cup Almond Milk
  • 1/2 Banana
  • 1/3 Cup Spinach
  • 1/4 Cup Fresh Mint
  • 6 Drops Peppermint Extract (can add more if you want)
  • 4 Ice Cubes
  • Garnished with Vegan Chocolate Chips

Throw all of these ingredients into a blender and enjoy!
